Day of Painting and colors

Finally painted the bathroom and finished the baby room! What a difference it has made! Otherwise everything else is pretty normal around here, gratefully! The leaves are changing colors and I haven't downloaded pictures for a while to show, but if you get a chance to see go to the mountains, the colors are beautiful! Fall is finally here and we are enjoying the change in season as much as possible... how is everyone else doing?

Sandy Beach in Utah


Yep! We found one! An actual SANDY beach, like being on the ocean/gulf in utah. Best of all it is only a few minutes away. If you want to know where, write me and I will give you all the details. Also, there are lots of small fish for fun fishing, which my husband likes, just to catch something is fun. We also found some great get away camp sites along a neat river. Here are some pictures of us having fun.

Say Goodbye to my cat - Miss Boots :(





Today I say GOODBYE to my first cat who ever loved me as her own. She was my boots, Miss Boots. She got her name by the three black paws whe has and the one tan one. She was my favorite cat ever. She came to me and loved me whenever I needed her. She snuggled with me when I was lonely and sad. She slept with me, comforting me through nights. She loved me and I loved her.
She was hit by a car approximately 3:30 pm today. I found her and her body was still warm, as I was heading out for a walk. She was on the side of the road. I took her home and said a prayer, letting Heavenly Father know how much I loved her and please take her home, hopefully so I can see her again one day. I asked for comfort, with tears running down my face, and felt Heavenly Father's plan, death is a part of it. We all have to die. I was comforted knowing I will see her one day again.
I am grateful for the time she has shared with me, playing fetch, walking beside me on walks and being a great cat. I buried her outside my bedroom window, under a tree. When I miss her, I can still see her in my mind's eye and know she is happy where she is.
Here is one of the last pictures I took of her, not too long ago. I miss you Miss Boots. You will forever be my first cat.

Chicken Pot Pie


3 Chicken Breasts
4 Medium Potatoes - or less if you want to more moisture by adding more gravy
10 Long Carrots or 2 Cups Chopped - or less for more gravy room in pan
1 Medium Onion
*1 Stick Butter
*1/2 c. flour
*6 bullion cubes - Chicken flavor
1 Teaspoon dried Thyme
*1 1/2 cups milk
1 cup frozen peas
1 cup frozen corn
2 Cups Bisquick Mix
1 1/4 cup milk
1/2 teaspoon garlic powder
1/2 teaspoon celery salt

In crockpot cook chicken and vegetables. When done layer in bottom of a 8 x 11 glass pan. In separate pan on stove saute onion in butter until tender. Add flour, bullions, thyme and milk. Cook on medium and whisk constantly until thick. Add to chicken and vegetables.

Mix Bisquick Mix, milk garlic powder and celery salt. Mixture will be thin. Spoon over pie.

Bake in oven at 350 degrees for 35-40 minutes, until crust is brown.

*For more moisture double the gravy mixture.

This was a mountain man rendezvous we found in Ogden this weekend. I had fun seeing everything and feeling like we went back in time. Larbear loved his whistle, Larry enjoyed his mountain man root beer and I enjoyed taking pictures and the fresh air. We had a great time.

Spring Fever



My honey and I have spring fever, which is causing us to get out and so a little more and surprise ourselves in the process. Larry loves animals, I do too, nothing like him. We adopted some rabbits and birds this weekend, to add to our growing farm. As the typical mother mentality, I enjoy watching them grow and hearing them chirp.
We were also able to visit the Ogden temple, for the first time. This temple will look different in a few years because it is going to have a complete remodel. It was a wonderful experience, being able to do family work there. It is beautiful to see what it is like before and then after. I am not sure how many know, there is also a Daughters of the Utah Pioneer Museum on the temple grounds, and a wonderful ice cream shop across the street! I had fun taking pictures as usual.

Stake Conference

Last weekend we had stake conference. Many good and insightful speakers, full of spirit and enlightenment, I soaked it in. One thought I wanted to share:

The speaker was speaking of serving a mission in the Philippines islands and what the members of the church. Some people were SO Poor, it was surprising how they lived. Often they would eat rice, that was what they most often ate, for every meal. Sometimes they would have a little extra money, they would buy a vegetable to put on the rice. One day a father of a large family caught a fish. He sat the fish on the table. His children went to touch, admiring and desiring to eat it. He stopped them, needing to save the fish for dinner.

Pointing to their rice, he said, "Look at the fish, Eat a bit of rice... Look at the fish, Eat a bit of rice!"

In our lives, we desire to have it all! He was telling us, that we can look at something we want, and only take what we need... look at something we want and only spend what we need. It is a idea I have thought about the last few days. It takes a humble person to be able to desire something but resist it at the same time.

Recipe for Curry Butternut Squash soup

I got this from Taste of Home recipe book about Nov. 2008 edition. Made it for Millcreek Garden Soup and Pie day, it was yummy. Makes alot. Be careful at the end, it burns easily when you add milk.

4 lbs butternut squash*
1 large onion
2 T butter
1 T minced fresh ginger root
2 1/2 teaspoons curry powder
3/4 teaspoon salt
1/4 teaspoon pepper
3 large potatoes, peeled and cubed*
6 cups chicken broth*
1 1/2 cups milk- good without this too.

*I used more than this recipe calls for.

Cook Squash, microwave, boil or oven cook it.

Saute onion, butter until tender. Stir in Curry, Ginger, Salt and Pepper. Cook for 2 minutes. Sir in potatoes; Stir in Broth. Bring to boil, reduce heat, cover and simmer for 15-20 minutes, until potatoes are tender. Cool slightly.

Blend potato mixture in a blender until smooth. Add squash and *more chicken broth, until smooth. Do a little at a time, not to overwork blender.

Return to pan, stir in milk, if desired.

I put in crockpot to keep warm- great for alot of people.

Wheat Bread Rolls

This is from a neighbor Louise Hill, visiting her she gave me some of her rolls. It is a delicious recipe. She said she got it from a lady years ago, originally who came from Holland. Within minutes, Larry quickly ate 2 out of the 4 rolls she gave me. Larbear loved them too!

2 Tbs yeast dissolved in 1/2 c. water
1 tsp sugar

add to the following four ingredients that have cooled to lukewarm:

5 c. hot water
2/3 c. vegetable oil
2/3 c. honey
2 Tbs salt

after mixing the yeast mixture into the above four ingredients add:

3 cups of ground wheat (7 cups freshly ground whole wheat flour)
enough white flour for dough to pull away from sides of bosch bread mixer (maybe 5 cups)

Add enough white flour until it pulls away from the sides of your bread mixer (maybe 5 cups or so). Knead for 5 minutes. Raise until double in bulk (about 1 hour). Roll dough in hand and set out on cookie sheets. Raise again for 1 hour. Bake for about 15 minutes. Makes 4 dozen rolls.

Larbear's 1st Birthday Party




We enjoyed a intimate 1st birthday party for Larbear Monday night. The theme was John Deere tractor and farm, since Larbear loves green, eating anything green... most recently peas. He wasn't really sure what cake was or frosting, but Daddy made sure he got introduced to it. Larbear enjoyed the toy tractor the best of all, we had fun watching him be introduced to frosting.

This is "Larbear" he is my cute, handsome little boy. We call him Larbear because he was named after his daddy and so I needed a nickname. He has a cute bear from the time he was born that he loves. Larbear fits him. He also loves to growl!

Pumpkin Choc Chip Muffins my Honey likes!

Pumpkin Choc Chip Muffins

2/3 cup Canola Oil/Veg Oil
3 cups sugar
4 eggs well beaten
1 3/4 cups pumpkin pie can or normal pumpkin
1/3 cup water

Mix in separate bowl
3 3/4 cup flour (1/4 cup less at sea level)
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon cloves
1 teaspoon cinnamon
1/2 teaspoon baking powder
2 teaspoon baking soda

Mix together wet and dry ingredients separately, then mix together. Bake at 325 degrees in muffin tins (with liners) for 15-20 minutes. Let cool in tins.
